<p>For our clients touring France this <a href="http://blisstravels.com/spring-provence-tour" target="_blank">May</a>, this proved to be exactly the case! On our journey through <a href="http://blisstravels.com/spring-provence-tour" target="_blank">Provence</a>, this group of foodies were taken to a renowned restaurant to meet the head chef, a Michelin-starred creative genius and enthusiastic lover of cuisine. But of course things didn&#8217;t end there. The head chef led the group to the restaurant&#8217;s kitchen for a <a href="http://blisstravelsnews.com/2012/10/08/france-culinary-travel-provences-lavender-fields-and-luminous-meals/" target="_blank">private cooking lesson</a>, where they chopped, sautéed, and laughed their way to a gourmet meal.</p>

<p>Under the guidance of the engaging chef, who is also a TV personality here, the meal came out stunningly. It was promptly enjoyed with bottles of local wine hand picked by Bliss (Who turns down a local wine when the area includes Chateauneuf du Pape and the other great Cote du Rhone wines?)  Of course, it&#8217;s not all food and wine. It&#8217;s also a great (and small) group of eight fun loving, interesting people that make these sorts of events a success. And this group laughed and enjoyed themselves late into the night.</p>

Huge spires reach into sky and it towers over every other building in the city.</p>

<p>The genius that designed it, <a href="http://en.wikipedia.org/wiki/Antoni_Gaud%C3%AD" target="_blank">Antonio Gaudi</a>, was considered &#8220;God&#8217;s Architect,&#8221; an extraordinarily devout man who recognized that his design was a little complicated and built models for the next architect to follow.</p>

<p>These turned out to be more helpful that he could have known&#8211;construction on his church began in 1882 and is still being working on today, making it the longest running architectural project in the world! In the style of Notre Dame, entire families devote their lives to creating this place, and the passion invested in it is as clear and important as the architecture.</p>
<p>When<a href="www.blisstravels.com" target="_blank"> Bliss Travels </a>clients are shown the<a href="http://www.sagradafamilia.cat" target="_blank"> Sagrada Familia</a> on our Barcelona trips, the meet the church with an awed silence.  People can spend hours exploring in and around the Basilica in awe of this marvel of architecture. Our native Spanish guide whose specialty is Gaudi&#8217;s architectural genius gave us all the inside scoop about Gaudi, and about future plans for the Basilica (Of course, being Bliss Travels, we also spent plenty of time finding the best tapas bars in the city to enjoy!)</p>

<p>And yet, at the end of the day there are still no words for this place. The Sagrada Familia has the capacity to make you feel very small, very important, and very proud to be human all at once.</p>

<p>The <a href="blisstravels.com" target="_blank">Bliss Travels</a> trip to <a href="http://blisstravels.com/tour-france-overview/" target="_blank">Provence</a> is coming up soon, and it is one of our favorites. The untamed, easy beauty of the region is like no other in the world. Something about the rolling lavender fields, the ancient stone villages, and the smell of pure sunshine just diminishes your worries and makes your stresses seem silly.</p>

<p>It really is no wonder that <a href="http://www.biography.com/people/vincent-van-gogh-9515695" target="_blank">Vincent van Gogh</a> escaped here from the hustle and bustle of life in <a href="http://blisstravels.com/holidays-in-paris-tour-france" target="_blank">Paris</a>. In February 1888, the painter moved to <a href="http://www.vangoghgallery.com/in_his_steps/arles.html" target="_blank">Arles</a>, one of the larger towns in the area, to work on his fragile health and to rid himself of the ever-increasing modernity in the cities—the same reason his friend and fellow painter Gauguin left. For a while it even soothed his artistic needs—he had been surrounded by too much gray in the city for an artist whose very essence relied on vivid colors, used with the utmost intention. In Provence, the colors he saw in his head were reflected by nature.</p>
<p>(I sometimes think we give the Impressionists and other revolutionary painters of this time too much credit. Though their work is gorgeous, they did not need to strain themselves much to paint it—the south of France really does have that incredible brilliance to it!)</p>
<p>It was during this time that van Gogh’s inspiration struck. In 15 months, he created over 300 paintings in his “Yellow House” and the sanatorium he lived in after suffering a mental breakdown (culminating with a fight with fellow artist Gauguin and the infamous lop of his ear). This sanatorium can actually still be visited, as <a href="blisstravels.com" target="_blank">Bliss</a> does regularly, and maintains a lovely flower garden similar to the one van Gogh took flowers from to paint.</p>

<p>Arles was the location of many of his most famous works, in fact, such as “<a href="http://jtmoore.org/files/2013/04/Van-Gogh-Starry-Nights.jpg">Starry Night</a>”, “The Evening Café” (seen here), “<a href="http://uploads2.wikipaintings.org/images/vincent-van-gogh/trees-in-the-garden-of-the-hospital-saint-paul-1888.jpg">The Hospital Garden</a>”, and “<a href="http://xaxor.com/images/Oil%20Paintings/Classic%20V/Vincent%20van%20Gogh%20(1853-1890)/Van_Gogh_Vincent_The_Langlois_Bridge_at_Arles_with_Women_Washing.jpg">Trinquetaille Bridge</a>”. Many of his floral and landscape pieces are from the time period as well, since he did not know many people to act as models in the new town (and those who saw his unconventional pieces were quite hesitant to be a part of them!)</p>

<p>It is incredible to think of all that was accomplished for art in such a sleepy town (that <a href="blisstravels.com" target="_blank">Bliss</a> is lucky enough to visit each summer.) Not much has changed since van Gogh’s time there—Arles is still built around stunning Roman ruins, filled with markets and friendly folk, homemade olive oil and soap shops, warm terracotta roofs and lavender wooden shutters, and a deep, innate respect for the beauty of the land itself.</p>
<p>One of the most popular parts of <a href="blisstravels.com" target="_blank">Bliss</a>’ French tours are our picnics out in olive tree orchards. The cicadas chirp lazily—a sound the region is never without—as we snack on typical Provencal food like figs, fresh fruit, and baguettes with locally made goat cheeses and tapenade. Sitting in the dappled sunlight, everything feels easy and utterly timeless, as if van Gogh is just beyond the trees, bringing us a <i><span style="text-decoration:underline;">tarte Tatin</span></i> from his favorite bakery. <a href="http://blisstravels.com/summer-tour-france" target="_blank">Provence</a> has an ageless beauty that connects old and new seamlessly.</p>

<p>One would hope that van Gogh had found as much inner peace in Provence as he did artistic inspiration.  Though sadly that wasn’t the case, we do know that he was in awe of the vivacity of the region. Scott Fitzgerald was barely on the map at the time he wrote it, an unsuccessful author living in a village on the coast of France.</p>
<p>In 1924 he and his wife Zelda did their own &#8220;tour of France&#8221; and moved to Valescure, a picturesque little town on the French Riviera, halfway between Marseille and Monaco, which continues to inspire people to this day. Maybe it is because of the medieval villages filled with street artists, little cafes, and bustling markets. Perhaps it is the sweeping views of the coastline, where only the vividly painted fishing boats distinguish where the azure waters stop and the cloudless sky begins. Inspiration may strike purely from the smells of the sea and the lavender fields and the steaming plates of the best food in the world, relished on a rickety table in a cobblestoned side street.</p>

<p>Even <a href="http://blisstravels.com/">Bliss Travels</a> groups are affected in the Riviera. People spontaneously buy journals as they tour France to sketch and start jotting down ideas for the novel they always wanted to write. Maybe one of us will be as inspired as F. Scott and create the next <i>Gatsby </i>on a tour! As Fitzgerald could have told us, anything is possible in <a href="http://blisstravels.com/summer-tour-france">Provence</a>.</p>
<p>But despite the region’s astounding effect on his creativity, the esteemed author cut his visit short once he discovered that his wife was having an affair with a French naval aviator. Packing quickly, <i>The Great Gatsby’</i>s final editing was to be done in Rome as the simple joy of <a href="http://blisstravels.com/spring-provence-tour"><span style="text-decoration:underline;">Provence</span></a> was left behind them after only two seasons.</p>

<p>            The novel was published as the well-traveled couple was returning to their beloved <a href="http://blisstravels.com/holidays-in-paris-tour-france"><span style="text-decoration:underline;">Paris</span></a>, a frequent stop of theirs. Though it was well received by critics, sales were underwhelming, adding to their already stressed relationship.</p>

<p>Thankfully, it was here that F. Scott found solace in a new friendship with Ernest Hemingway, who was as yet relatively unknown in America. The two shared many things in common—both were literary geniuses and heavy drinkers going through rough patches in their careers.  However, Hemingway would go on to achieve fame in his lifetime—F. Scott would die believing he was a failure.</p>
<p>Yet at the time, neither was aware that their writings would be considered revolutionary or would be read by billions. Their friendship and the city they both loved dearly kept them afloat with hope and inspiration. Can you imagine them strolling through the side streets of <a href="http://blisstravels.com/tour-france-overview/"><span style="text-decoration:underline;">Paris</span></a>—how the great city influenced their work, their thoughts, their lives? Did they meet at Notre Dame to talk of literature? Did they visit the Sacré Coeur and watch the sun set over Paris?</p>
<p>Sitting in a café a few blocks over from the Louvre, perhaps feasting on something we always enjoy &#8211;a special menu of Os a Moelle in winter or a perfectly roasted chicken, like only the French make!<a href="http://blisstravelsnews.files.wordpress.com/2013/05/2013-04-09-01-13-55.jpg"><img class="aligncenter size-medium wp-image-1901" alt="a dish from a recent vacation in Paris!" src="http://blisstravelsnews.files.wordpress.com/2013/05/2013-04-09-01-13-55.jpg?w=300&#038;h=224" width="300" height="224" /></a></p>
<p>It is easy to picture Fitzgerald and Hemingway side by side, contemplatively sipping a<i> café au lait</i>, observing the passersby and dreaming up the world’s next immortal novel. Two friends with extraordinary talents, quietly taking in the most beautiful city in the world. The fact that we can tour France in a similar way is a gift in itself.</p>
<p>Today, you can visit the spot where the two met, the Dingo American Bar and Restaurant (10 rue Delambre) or see the Fitzgeralds’ apartment building at 14 rue de Tilsitt, near the Arc de Triomphe, which give the pleasant thrill of a solid connection with the past.</p>

<p>The Fitzgeralds stayed in France for two years, splitting their time between the apartment in Paris and the Riviera, where F. Scott wrote and his wife Zelda became increasingly bizarre (she would eventually suffer from several mental breaks). After much debate, they finally returned to America for a life of fewer distractions than the one they had in <a href="http:/http://blisstravels.com/" target="_blank"><span style="text-decoration:underline;">Europe</span></a>, which was ironically the very reason they had moved overseas in the first place.</p>
<p>As a result of his wife’s illness, they returned to France only once more. Did F. Scott miss his adopted home? <a href="http://blisstravels.com/tour-france-overview/" target="_blank"><span style="text-decoration:underline;">France</span></a> has a way of pulling people in and making them crave it once they leave, a feeling that is quickly understood once you visit. Something in the very light makes the world more beautiful, simple, romantic—it provided a muse for <i>The Great Gatsby,</i> one of the best books ever written. And if great authors like Hemingway and F. Scott Fitzgerald fell in love with it, then we certainly cannot attempt to avoid its charms.</p>

There are too many families in the area who cannot afford their groceries, much less enjoy a culinary adventure of their own &#8211;even a local one. In order to help out <a href="http://blisstravels.com/" target="_blank">Bliss Travels</a> sponsors trips to the grocery store for families in need, letting them enjoy a respite from the anxiety of paying for something that should, at least sometimes, be a source of enjoyment. For each vacation purchased, <a href="http://blisstravels.com">Bliss</a> will donate $150 to a family so that they too can have the luxury of purchasing things on their &#8220;wish list&#8221;.</p>

<p style="text-align:center;"><strong>We tasted 5 wines, all from France.</strong></p>
<p style="text-align:center;"><strong>Wine 1</strong>: Laurent Combier Crozes Hermitage white. A beautiful wine with floral notes and a rich bouquet. This wine is from just north of Chateauneuf du Pape. People don&#8217;t think of Chateauneuf du Pape as a town or even area that produces whites, but they produce excellent white wines. This is a very small part of production but the top ones are truly special &#8211;and hard to find in the US. We regularly highlight these when in Provence.</p>

<p style="text-align:center;"><strong>Wine 2</strong>: Meursault, Les Narvaux, 2010 David Moret. A great buttery chardonnay. Loved this wine (as I do all Burgundy wines). This wine has a bit more minerality than the Les Charmes, 1er cru, we like to profile on our Burgundy trips.</p>

<p style="text-align:center;"><strong>Wine 3</strong>: Auxey Duresses, 2010, Billard.  A very nice pinot noir from Burgundy. However, Burgundy did not receive its due by comparing and tasting a village wine with the 1er Grand Cru classe from Bordeaux. Next tasting I will showcase wines from Burgundy that are equal in quality and ranking to the ones from Bordeaux. Because this region&#8217;s wines have such a &#8220;wow&#8221; factor  -and the area itself is so stunning &#8211;it&#8217;s a shame to leave people thinking one region is superior to the other!</p>

<p style="text-align:center;"><strong>Wine 4:</strong> Les Amouriers, Vacqueyras, 2010. This grenache and syrah wine is also from just north of Chateauneuf du Pape, and a very accessible alternative to the big names (and prices) of Chateauneuf du Pape reds. Needs to breath for about 90 minutes to 2 hours as it is young. But is a good wine, full flavored and a great example of what the region can produce.</p>

<p style="text-align:center;"><strong>Wine 5</strong>: Chateau Pavie Macquin, 2007, her Grand Cru Classe. Predominantly merlot (84%) with 16% cabernet franc, this wine is truly a top wine. It surely overshadowed the other reds. It was smooth, rich and extremely well balanced. Still young, it was opened 2 hours before drinking. Next tasting, we will bring out the big guns in Burgundy to compare with Bordeaux. I think it will be a very tough decision for folks at that point!</p>

<p>One of the best warm weather traditional Provencal dishes is the Aioli. Named after the garlic mayonnaise like sauce used as the centerpiece of the dish (the word Aioli comes from the words for &#8216;garlic&#8217; and &#8216;oil&#8217;), this is quintessential Provencal fare. It has it&#8217;s roots, like many dishes of that region, in Roman times. It has been revered as a symbol of Provencal life for hundreds of years.</p>
<p>&nbsp;</p>
<p><em>&#8220;Among the peoples living around the Mediterranean coasts, the use of garlic dates back to the very beginning of cooking itself. But as Leon Daudet observed, with the aioli it attained its peak of perfection, &#8216;the very highest degree of those truly civilized customs and habits that until health with well-being.&#8217; So that we need feel no astonishment at learning that when the poet Mistral founded a Provencal newspaper (this was in 1891), he called it L&#8217;Aioli. The sauce had become a symbol. And he wrote of it with justice: &#8216;It concentrates all the warmth, the strength, the sun-loving gaiety of Provence in its essence, but it also has a particular virtue: it keeps flies away. Those who don&#8217;t like it, those whose stomachs rise at the thought of our oil, won&#8217;t come buzzing around us wasting our time. There&#8217;ll just be the family.&#8217; And elsewhere again: &#8216;The ailoi goes slightly to the head, impregnates the body with its warmth, and bathes the soul with its enthusiasm&#8230;&#8221;</em><br />

<p>It&#8217;s served every Friday at the local cafe (because the fish monger comes on Fridays, and that&#8217;s the day of the Provencal market). It&#8217;s served at group meals &#8211;those community meals offered at village fetes and fares during the spring and summer months. This dish is a market fresh favorite.</p>
<p>There are many variations, but the mainstays are this:</p>
<p>Aioli sauce (recipes below)</p>
<p>Hard boiled egg</p>
<p>Boiled potato</p>
<p>Haricots verts (the thin French green beans)</p>
<p>Tomato (raw)</p>
<p>and steamed cod.</p>
<p>Then, the other items you might see are:</p>
<p>sea snails</p>
<p>cauliflower</p>
<p>zucchini</p>
<p>artichoke</p>
<p>mussels (along the Mediterranean)</p>
<p>&nbsp;</p>
<p>Everything is served room temperature (unless you have steamed mussels, which of course, are served warm). The sauce is cold. You dip each item in the sauce to flavor it.</p>
<p style="text-align:center;"><strong>How to make a quick and simple Aioli:</strong></p>
<p>Take mayonnaise (1/2 cup) and mixed with crushed garlic clove (4-6), a squeeze of lemon, a few tablespoons of white wine (you can determine how thick or thin you want the sauce by how much wine you use), sea salt &#8211;and optional flavors such as saffron or herbs de Provence.</p>
<p>Mix well, cover tightly and let sit for <em>at least 3-4 hours. Best if left overnight to allow the flavors to meld.</em></p>
<p>For a traditional Aioli, this is what Escoffier says:</p>
<p>&nbsp;</p>
<p><b>[1907]<br />
&#8220;Aioli, or Beurre de Provence</b>. Pound 30 g (1 oz) garlic as finely as possible in the mortar, add 1 raw egg yolk and a pinch of salt and gradually mix in 1 1/2 dl (9 fl oz or 1 1/8 U.S. cup) oil allowing it to fall drop by drop to begin with, then faster as a thread as the sauce begins to thicken. The thickening of the sauce takes place by turning the pestle vigorously whilst adding the oil. The consistency of the sauce should be adjusted during its making by adding the juice of 1 lemon and 1;2 tbs cold water little by little. Note: Should the sauce separate it can be reconstituted by working it into 1 egg yolk as for Mayonnaise.&#8221;<br />

In June, the cherries are in full bloom. <p style="text-align:center;"><a href="http://www.timeanddate.com/holidays/france/bastille-day" target="_blank">Bastille Day</a> celebrates the formation of the French republic and the overthrow of the French monarchy. This is traditionally symbolized by the storming of the Bastille (the Parisian prison) on July 14, 1789.  While there were many reasons for the revolution, the most well known and emblematic  is the excessive royal life that Louis XIV and Marie Antoinette led at the court of Versailles.</p>
<p style="text-align:center;">The pivotal moment that Bastille Day celebrates is the freeing of the prisoners from the Bastille. There were, in fact, very few prisoners in the Bastille at that time, so the significance of that event was more symbolic than actual. Each year, this holiday, much like our own July 4th, is celebrated with fireworks, parades, village festivals, huge Provencal markets, music and dances &#8211;and of course, the flying of the tri-color flag.</p>

<p style="text-align:center;">The tri color flag is a reflection of the motto of the French republic: <i><a href="http://en.wikipedia.org/wiki/Liberté,_égalité,_fraternité" target="_blank">Liberté, Égalité, Fraternité </a>&#8211; </i>liberty, equality and brotherhood. This was one of several mottos used during the time of the revolution. The Fete Nationale (National holiday) is the largest annual celebration in France.</p>
<p style="text-align:center;">Paris attracts huge crowds for the celebration. Pedestrians and people picnicing fill every last space on every Seine river bridge, and along the banks of the Seine. They fill the parks around the Eiffel Tower as well. It is a party that begins in the morning with parades and goes late into the night with fireworks and public balls, live music.</p>
<p style="text-align:center;"> As spectacular as Paris is, and as big as the celebration around the Eiffel tower is, I have to say that the countryside is even better. There you can see fireworks over 100o year old villages, experience festival markets and surround yourself with authentic  ambiance in a way that is not possible in big cities (no matter how beautiful).  The advice of<a href="http://www.blisstravels.com" target="_blank"> Bliss Travels</a>: Enjoy the best Medieval Provencal village or Mediterranean &#8220;fete&#8221; possible for this holiday. It is breathtakingly beautiful, and often feels like time stopped  500 years before you arrived.</p>

<p style="text-align:center;">One of our favorite places to<a href="http://blisstravels.com/summer-tour-france" target="_blank"> celebrate Bastille Day is St Remy</a>, home of Van Gogh &#8211;and setting for many of his paintings. The celebrations here include markets, fireworks, bull fights, parades and music.</p>
<p style="text-align:center;">The markets wind through almost all of the streets of the old village. They fill every small square, and the periphery roads as well.</p>

<p style="text-align:center;">Vendors give out tastes of their products. A sure sign that they are proud of what they are selling. In addition, during the celebrations surrounding Bastille Day, there is music and street performers all over.</p>
<p style="text-align:center;">The <a href="http://www.google.com/url?sa=t&amp;rct=j&amp;q=rules%20for%20provencal%20bull%20fights&amp;source=web&amp;cd=1&amp;cad=rja&amp;ved=0CDIQFjAA&amp;url=http%3A%2F%2Fen.wikipedia.org%2Fwiki%2FBullfighting&amp;ei=uM4GUZKGM5Oy0AHe54DgBQ&amp;usg=AFQjCNEy7tnOn3FUIFg3Dr6Lc6XTaQafcA&amp;sig2=YT_Mu04I1u5Ef9jRfSR9yA&amp;bvm=bv.41524429,d.dmQ" target="_blank">bull fights</a> that take place over the national holiday in France are a game during which the bulls are not hurt (though, often, the participants do suffer some injury). The game is called the &#8220;course camarguaise&#8221; and involves taking a rosette from the horn of the bull and getting away before the bull can hurt them. The participants leap over the wooden fence that surrounds the main area of the arena while their team mates distract the bull. There is also the herding of the bulls by the &#8220;cowboys&#8221; and the running of the bulls through the streets of the town. This is a major reason to celebrate Bastille Day in the South &#8211;these unique events simply don&#8217;t happen in Paris!</p>
